His molecular-level work is supported by methods like TLC, HPAEC-PAD, and DSC for thermal and structural evaluation. In the realm of starch modification, Dr. Jeong has engineered enzyme-modified starches using CGTase and branching enzymes. His work includes freeze-thaw stability analysis, retrogradation studies, and texture profiling of food applications such as bread and sauces. He is also adept at extracting and analyzing bioactive compounds from natural products using optimized ethanol-based extraction, focusing on solvent ratios, time, and temperature conditions to maximize yield.
